Weather in galapagos very rarely gets very hot, being near the equator. I on the other hand always dive with a 3 mm full suit just as a protection from corals and brushing against wrecks, no matter where I dive (which is almost always in the hot caribbean) My rule is that I can always get cooler by letting some water in the suit, but i can't get warmer if I get cold underwater.
My co worker visited Galapagos about 4 months ago and she had a blast and she wore her usual 3 mm suit.
I would feel safe wearing a 3mm suit.

Usually wet suits have positive buoyancy so you shouldn't worry about that. As for warmth I believe if you don't dive very deep a 3mm suit could be enough. I personally ususally dive with a 5mm suit, because at a greater depht it can get cold.

Personal preference. My financial advisor went just before christmas and needed a 5mm.

No problem whatsoever. 3mm, is enough to keep you warm and protect you. It really isn't that heavy so you shouldn't have any problems with bouyancy.
