There are really no hand signals for officials. If a swimmer is disqualified, the official the observes the DQ will put their hand up in the air above their head for a few seconds. They will then fill out some paperwork to turn it in at the scoring table and speak to the swimmer to let them know they were DQ'd and why.

Other than raising a hand when a disqualification is made, there are no formal hand signals.

While I have seen hand signals used at meets, they are normally not encouraged. Radios are the favored means of communcation.

Under USA Swimming rules:

Instances when an official will raise their hand to indicate a disqualification are indicated in sections 102.10.1, and 102.13.2.

Instances when an official may make a disqualification without raising a hand are in sections 102.15.6 B when dual confirmation of relay take-offs is used, and 102.13.2 for false starts.

There are no official hand signals, but they do use some standard hand signs like the thumbs up to signal O.K.
Some divers have started learning and using sign language for the deaf and there are underwater comm sets that allow divers to talk to each other underwater.
The hand signs may be taught in a dive certification class.

most of the time when you get disqualified they just hold up there fingers to tell the others the lane that has the disqualification is and they communicate the rest on their walkie talkies
