During the Renaissance there were quite a number of such notable people with many talents. My own favourite is Leon Battista Alberti.

The word most often used to describe them is "polymath". It does not mean anything to do with mathematics.

P.S. Since you specifically asked for a WORD, not a phrase, I was thinking only of single words. Versatile literally means exactly what you described.
