No one is really sure why they jump (breach) and of course they must come to the surface to breath, but here are a few ideas scientists subscribe to: breaching could knock off annoying skin parasites, it could be a dominance display between males (they have found this to be true in a population of New Zealand Bottlenose Dolphins in Doubtful Sound), they could be trying to get a look around (dolphins have great eyesight both in and out of the water), or they might just do it for fun. It could also be a combination of all of these things, but until we learn to "speak dolphin", we may never know.

Sometimes just for fun, I think. Although I've sometimes seen them clear the water when they're chasing fish. I've often seen a salmon fly out of the water followed by a dolphin. It looks like they were just heading towards the surface so fast that they couldn't stop.

They have to come up for air, but it's also because they just like doing it - it's fun and a good way of displaying their strenght and attitude to their friends and potential mates.

a dolphin named Flipper, was trained to jump out of the water, and he was very famous, played in too many movies, when he was given back his freedom with a cosin named Willy, he started to teach other dolphins how to jump out of the water, so maybe some Holywood producer may take them under his wing.
the proof is that dolphins do this only when they are being watched or filmed, its their way of making a career.

Just like humans, they have a desire to fly. But because they don't have hands, they can't build aircraft, so they're forced to just jump.
