It is the release of nitrogen gas into the joint cavity

"When force is placed on a joint such as your knuckle, the “pop” is a sound resulting from the release of nitrogen gas into the joint cavity. This occurs because a negative pressure is created. The nitrogen is normally dissolved in fluid that is present in the joint (synovial fluid,) but explodes out of the solution when the pressure is significantly reduced. When this happens, the joint becomes swollen, since gas occupies more space than fluid. The joint remains swollen anywhere from 10 minutes to several hours until the gas is reabsorbed back into the synovial fluid. A second “pop” is not possible until this occurs."

You have something called synovial fluid in the joints of your knuckles. When you crack them, you are actually pulling the knuckle joint apart and "popping" the joint back in place.

Nitrogen is in the fluid, and when you disturb the joint the fluid bubbles up. When the bubbles pop, you hear the noise.

.In between the knuckle joints are what's noted as Synovial pills, that are crammed with Synovial Fluid; they act as buffers that stop the joints wearing out. interior this fluid are air bubbles which, if compressed, implode and make that cracking sound you hear once you 'pop' your knuckles.
