on the molecular level, how does a lioquid differ from a gas? How does it differ from a soild?

The primary difference is the degree of bonding. In a solid one has crystalline bonds along with possible polar bonds and also if a metal the metallic bond.
In liquids the amount of bonding between molecules is less than in solids. The primary types of bonds in liquids are hydrogen bonds (if it contains Hydrogen, nitrogen and/or oxygen). Other bonds in liquids include polar bonds of a nature other than hydrogen bonds, van der Waals forces (weaker polar type of bonds due to induction).
In gases the bonds are very weak and/or non existant. In ideal gases there are no bonds between molecules. However in real gases there are bonds that form particularly at low temperature and high pressures.

In a solid, the molecules are packed tightly together in a rigid block. They basically can't move out of their positions, so solids have fixed shapes, are not readily compressible, etc.

In a liquid, the molecules are still connected, but more loosely; they have enough freedom to slide past each other. As they move they break their (fairly weak) bonds and re-form them with other molecules. Because the molecules are still tightly packed, liquids are also not readily compressible, but because they can move around liquids do not have a fixed shape and conform to the shape of their container.

In a gas the molecules are basically not connected to each other at all. They go flying around wherever they like. Because they are not connected to each other there is plenty of empty space, so gases can be easily compressed. Since the molecules move around the gas has no fixed shape but conforms to the shape of the container; in addition, since each molecule moves independently the gas will expand to fill the entire container.
