Sue the hotel. The owner of the hotel will have to deal with the lawsuit and it would be up to them to inform their insurance. Your case would be between you and the hotel; what the hotel's insurance would or would not cover is between the hotel and their insurance company, and you do not have to be involved with that.

You would have to get the business name of the Hotel; the sign outside might say "Park Place Hotel" but the owner might be something like "George and Bob LLC" for instance. You must have the correct entity named n your complaint. There might be no such legal entity as "Park Place Hotel" so it would be meaningless to sue something that does not exist.

Before you contact them---please use spell check and know that sew is not the word you are looking for. Present yourself as professional and they will take you that way. Sue is the word you want. You don't need to contact them. You need an attorney. They will know what to do and take care of the communication that is needed. Anything you say to them(hotel) will be used against you if you don't know the law well enough to speak intelligently on the subject. You are much better off and stand a better chance of winning any suit if you leave it to people who know the law.

You don't need to know the hotel's insurance company. You sue the hotel. If they have insurance it may or may not pay. That's not an issue for you to concern yourself with, it's between the hotel and the insurance company.

Where did this happen? Contact the best Personal Injury Lawyer in that area, ask around for referrals for a lawyer, but do not try and deal with the insurance company yourself. THEY WILL SCREW YOU!!
