When bodies decompose, the bacteria within them produces gas. The gas causes the bodies to rise to the surface. After the bacteria, and fish or other forms of life, have consumed the edible substance within the body the weight of the bones will cause it to sink back to the bottom of the lake, river or sea; where it will remain permanently unless disturbed by natural occurences such as earthquakes.

The human body is heavy as such and sinks in water.But as decomposition sets in the cells(made up of amino acids) in the body starts breaking down into simpler compounds some of which are gases.These gases start accumulating in the body predominantly in the stomach region as there is no way out.(The skin & tissues are impermeable).The formation and presence of these gases make the body bouyant and it comes to the surface

This is because of decomposition gases produced by the decomposition process, they get trapped and body surfaces.
Minimum 3 days in warm climate and in Arctic and Antarctica it may take climate changes and then if it is in a deep spot it may take years and never surface if fish starts feeding on it, the gases escapes.

Most, dead body should float on the surface of the water but if lungs filled up or body gets soaked up with water it sinks first.
