Definitions play a great role in science. Scientists take words from our everyday lives or make up other words and they attach to them certain meanings, meanings that will make their studies easier. Definitions are not rules or theories, so they cannot be proved or disproved. However, they can be replaced by more effective definitions or they can be totally discarded, and consequently the system of knowledge "produced" based on those definitions will be tossed away. In science, energy is defined (or better, described) by those two definitions you give, and it is also represented by certain equations (energy itself represents certain quantities, as defined). Your comment is correct, but not in the field/concept of how science works -remember science is written in the language of mathematics, and there are already some expressions about energy. Here is a question for you: How would you relate your definition to mathematical expressions (of the type of number-variable expressions, not the type time=money :-))?. Elaborate. If you do this, you will be nominated for sure for some great award. Non-euclidean geometries have been developed centuries after Euclides, because some people dared to set their own definitions of the relation between a point and a straight line. Nevertheless, they could not escape mathematics, at least in the way we picture mathematics normally.

When a person dies all his energy is in the form of heat which get automatically liberated to the atmosphere.

regarding soul i can say that "neither i nor you have seen that thing. even if it exists, according to Hinduism it either goes to God after the death of it's body or has to take birth as the same or new speice.

That energy is not destroyed but is converted into heat and released from the body.

The dead body is decomposed by insects and bacteria thus the energy is passed to them.
