Wow a lot, Eurochow, Mr Chow in Beverly Hills are nice fancy restaurants frequented by celebs.
Crustacean in Beverly Hills is also great for its crabs.
For fancy Korean grill (not the greasy ones like in K Town) try Woo Lae Wook on La Cienega.

For a change of pace try The Gardens of Taxco in West Hollywood. It's been there forever and while not highly formal in the traditional sense it will seem so as it serves delicious Mexican food in a way that I bet you have never experienced. I recommend calling or checking the guide books/web sites to make sure it is what you are looking for.
Also think about the restaurants in some of the top hotels - think Peninsula, Four Seasons, or Hotel Bel Air. All have terrific food and service and you will not look out of place in a nice suit or evening gown.

Patina / Pinot downtown by the Walt Disney Concert Hall. Go see a concert at the Music Center or a play. Make a whole elegant outing of it.

believe it or not, check out "The Restaurant" at the Getty Center, in the Sepulveda pass off of the 405... the food is excellent and the views are spectacular. it has formal service.
