It also prevents the ends of lumber from checking to much (cracking). On building lumber it is not as critical but on hardwoods they take more care to make sure ends are sealed.
Ends of lumber dry faster than the center if they are not sealed and crack.

When my b/f was working in the timber industry the different colours were used by logging companies for identification of which company the lumber came from.
