In my opinion, Smeagol / Gollum is the best character. All of the characters are exceptionally deep and well thought out, but Gollum is definitely one of the most detailed creations of Tolkien. The character is just so complicated, often taking on three personalities; Gollum, Smeagol, and the Ring (referring to both the ring and himself as "precious"). He's also one of the most determined characters - starting back in the Hobbit, he followed the ring to the very end.
The conflict of character is enough for me to love Gollum, and my ability to do a wicked impersonation of him helps too.
