Yes you can. Download handbrake and install it. Run the application and change the format to .mp4(as the encoding codec) then you just drag the movies into itunes and place them on your ipod. I recommend making the files small in size if you are just going to be watching it on your ipod. If you will watch it through your ipod onto a tv then make it bigger but try and do this overnight with no other applications open.It is processor intensive and that means it can take over 20hours sometimes but the smaller the file the faster it will be.

I purchased a cheap ($40) program called Wondershare DVD to iPod ripper which will allow you to rip DVD's you already own into a format readable by your iPod. I've already done three movies and it works great - it adds them into the movies section of your iTunes so you can manage it. There is a trial version of it too if you want to test it out.
