my mechanic says that my intake manifold has a crack in it and he says that is what is starting my car to lag when starting... specs chevy 350 new carb new starter new aleternator, new optima yellow top

this is true. you can get cracks in a intake. i have a dual plane high rise on a 350 sb and the crack in mine dosen't effect me it's not to say it could not but i've never seen it. how big / wide is the crack. maybe there is a air intake leak effect.

Very possible. Have seen it a couple of times, especially some of the new plastic ones.
