You can write thank-you notes for all your Christmas presents, if you've not yet done so. You can play tic tac toe. You can draw the scenery you see out the window. You can use words instead and describe the scenery as though someone were going to paint it from your description. (I like doing that one, personally.)

If you are traveling with someone other than the driver, you could play a game where each person takes a word or phrase (about the same amount of letters) and writes it a paper then, you exchange the paper and whoever unscrambles their word or phrase first, wins!!! (They get to buy lunch!!) ; )

make a list of all the things you see that might not be all that common, count how many red, green, blue, etc cars on a graph, hangman, if you have company of others, scribble pictures, when you do a squiggle or some lines or such and another person has to turn it into a picture of something....

RPGs, write poetry or song, origami, paper puppet show, write messages with an e-mail to reply to, toss it where someone would find it and see what happens...
