My parents recently moved to the midwest, and were told that it will get humid in the summer. They were told that this occurs because the corn will sweat. To me this sounds kindof strange. Does corn really sweat?

No corn does not sweat. It does respirate however. Typically corn will be wet in the morning from dew which is how it gets it's reputation of sweating.
