I think you were really asking what affect it has on the internal parts of the body.
One thing I read is that it mainly affects your muscles. The body assumes they aren't needed.

yes, its the same (ignoring the small change in height). gravity is always there no matter if you are in a car, on top of your bike, on your bed, hanging from a bar..etc. The only thing that can change the graivty itself (with respect to lony the earth) is the mass of the earth. i.e if half of the earths rock just disappeared the gravity would decrease. So, when you jump on the bar and hang gravity will still pull you with the same force. The only reason that you stay up there is your muscles provide enough force to counter act the gravity force. The way you know gravity is still there is because your muscles are straining....if all of a sudden your muscle didnt have to do anything...and you still stay up on the bar..then gravity has disappeared or another force is at work

Body fluids gravitate down causing your foot to swell almost a size more at days end. Your legs swell and the veins tend to go to hell because its harder to pump the blood up to the heart. If you rise up quickly you can faint as the blood remains in the lower part of your body interrupting flow to brain.

It requires us to use force to raise our bodies, run uphill, climb a rope, lift objects, etc., otherwise, everything including our bodies would be light as a feather and we would all float and we would deteriorate from never getting any exercise.

Well aside from the obvious (it pulls you down to Earth,) it also creates tides in your body. The tidal forces are so small as to be indetectable, but they are there.
