Depends what platform you like, hears my personal faves:
GoW (Shooter 3rd Person)
Battlefield2 (Shooter 1st Person)
Fight Night (Sports)
Dead Rising (Sick & Funny)
Need for Speed Carbon (Racing)
Oblivion (Say goodbye to your social life!!)
Thats a good start!
Why not try renting a few and seeing what they are like first?

My boyfriend has been playing Oblivion non stop. If you've ever played Fable (Platinum Hits for the regular XBox), then you'd enjoy Oblivion. The story is longer, and it's somewhat related to Morrowind, which was another popular regular XBox game. But yeah. Oblivion, and I've also heard Gears of War is an awesome game. Oh, watch for Halo 3 in the summer. THAT'S A MUST!!!

Gears of War and Elder Scroll 4 Oblivion are probably the best out there.

gears, cod, madden 07-06, if ur new to the madden series u should get 06 because its similar to 07 and its way cheaper so u can get a taste for what the madden series is like. NFS, get xbox live too games are much funner w/ it and if u don't already have it get halo 2

well shooters theres gears of war (got BEST REVIEWS), call of duty 3, F.E.A.R., rainbow six vegas and halo 2 (the xbox version)
and if u want sports games go for nba live or def. madden '07.
and if u want old school games, there is doom, contra and ultimate mortal kombat 3 available from xboxlive arcade. make sure u get xbox live cuz its one of the best things about 360
