I loved gilmore girls, and I still watch it, but has anyone else noticed that every since Amy and Dan Pallidino left, the show is isnt as good anymore.
I really dont like the new guy as much, the character dont really seem like themselves. There is no more of the characteristic "witty banter".
Does anyone else miss the old writers too?

I definitely find that the show definitely isn't the same. To be honest, I actually keep on missing the new episodes for whatever reason.
So yes I'm one of those who misses the original writers.
To answer your question about why they left, the short story reason is that they wanted a longer deal and the studio didn't want that.

I miss them too. The show went downhill.
Apperently Amy doesn't even watch anymore but there are rumors of a Palladino scripted finale!
