Throughout most of the English speaking world, "grey" is the preferred spelling. In the USA it is "gray". Both forms have a long history and originate in the Old English word 'græg'. Other "-æg" words have gone either way - "clay" and "whey" are both from OE "-æg" words.

Use whichever form you are familiar with.

Gray is preferred in American English, grey is correct in British English.
