Is there a particular medicine you take only at night? Could be a reaction.
There's also the chance that maybe you ARE biting your tongue. Some people do this in addition to teeth grinding. A mouth guard for a night or two would probably show if this is the problem.

You probably ARE biting your tongue in your sleep. Some people grind their teeth all night. Your tongue can get in the way. Get a night guard and see if that stops the problem.

Are you stressed out?
I grind my teeth when I sleep - and I always wake up with sore jaws. Maybe you are doing something similar with your tongue.
I would go to the doctor if it keeps happening, because you might be having some sort of allergic reaction. Have you changed toothpastes lately? Maybe you are reacting to something new in the formula...

Maybe you eat something that you are allergic to, or you bite it a night and you don't wake up.
