Bartender would obviously pay the best, but here are some other ideas:
Barback
Waiter/Waitress
Bouncer/Security Guard
Airport jobs (they're open 24/7)
Mail/FedEx overnight mail sorting jobs
Stocking jobs at WalMart, Target, etc. to restock the store overnight
Customer service/phones at a 24-hour helpdesk

a security guard would be really good. and nobody wants the night shift so you should be good to go
