So the farmers will have one extra hour of daylight to tend to their crops.

It actually started in World War I as a way to conserve energy. I am not certain of the details, but it decided even when the war was over to continue the process. BTW, the Congress passed a law last year the daylight savings times will now start in March and end in November. So there will only be approximately 3 months when we are on Standard Time.
