the easiest hands down has got to be Breaking the law-by Judas Priest awesome and fun song to learn and bloodbrothers by Iron Maiden.i'v learn those two quickly.

All you have to do is learn Barre chords and then you can play rhythm to just about any song on the planet (Google "Barre chords" to find out). If you want to learn how to play lead and ease your way into it, start off with artists like B.B. King and Eric Clapton -- they don't play fast but they really know how to make their guitars sing.
