Three reasons:
#1: water on the surface delays wilting;
#2: wet produce looks more appetizing and desireable;
#3: water (especially on "light" foods, like letture and sprouts) adds a significant amount of weight to the produce, so that you pay a bit more for it than you would if it were dry.

Spraying with water makes them look fresh and nicer. Without water, fruits & veggies wilt and dull-out

Vegetable produce lose water through their stomata (and to a lesser extent, their cuticle). Spraying keeps them from wilitng.

there is not greater medical answer than this: with the aid of fact it somewhat is COOL!! no longer chilly... I advise cool! It promises interaction with the fruit and vegetables which you could not get everywhere else... different than on the farm. and you do no longer survive a farm do you? i did no longer think of so... city boy.

How do you know it's water?
Maybe they are spraying it with something special just when you walk by?

It keeps them from getting too ripe. The process is called "spritzing".
