Well size for a start, Manta's are huge (up to 7.5 meter's from wing tip to wing tip) but they feed mainly on plankton, stingrays are a lot smaller ( up to 2 meter's) and they get there name from the sting or barb on their tail ( and it was a stingray that killed Steve)

Stingray

Manta ray
a large warm-water ray with wide pectoral fins, a long tail, and two fins resembling horns that project from the head.

manta rays are more dangerous although they are cousins... it was a manta ray that killed steve erwin!
