why do the chinese celebrate it? For a far more important reason than we do. In china it represents the worst of the winter time..and this is the turning point..so that even though people are running out of food etc...things will now start to grow again and the days will be longer..... That's why Chinese New Year is Gong xi fa cai...it's like "congratulations we made it"--so of course you don't say it before the actual day because it doesn't make sense to do so..In our equivalent it would be like saying Happy january first...when it was only december 23rd. The english equivalent of happy new year is xin nian kuai le...but that's not quite the same--it's used in the same fashion as the western "happy new year".
But why do we celebrate Hallowe'en it's not american either?

Chinese for the most part and Vietnamese do because of their lunar calendar. I acknowledge and respect it because of Chinese or Vietnamese co-workers, acquaintances that I've met over the year. I love history and learning about traditions of other ethnic and cultural groups.
We also celebrate St. Patrick's Day, Valentine, etc.

I like to celebrate Chinese New Year because it gives me a second chance to have another New Years Celebration. there is nothing better than a second chance to do things right, and their food is fantastic. of course I happen to like all kinds of food.
