why do they stretch a funeral out over a week?

If the person is dead as President Ford is why dothey make the immediate family(especially Betty Ford) suffer thru all the travel?

A funeral like Ford's is big. Too big just to be two or three days.

"Suffering through all the travel" is part of being a public figure, or being a family member of one.
