Definitely Ultima IV and Times of Lore.
Impossible Mission was also great with the cool speech effects.
Giana Sisters was the "Mario for the C64".

Ultima V was my first Ultima game, so I'll always have a soft spot for it.

Pitfall!
It's my favorite because my mom would wake up in the middle of night and start playing to "cure" her insomnia. Nobody could sleep through her screeching. So, the whole family was up encouraging her and offering technique advice.
This question makes me feel old.
