I've read that its good to salivate after eating, meaning less bacteria. How about a microscope? Count or density?

Line graph is better...
Because using line graph you easily see whether there's increase of bacteria after using chewing gum right after meals...
However, I really do not know if there's a way how you can measure the bacteria...are you going to do any lab testing??

You would have to grow a culture from the bacteria. You should think up a new project. That one will be way more involved than you might think, and the change actually caused by gum and not other factors will be practically impossible without a lab environment.
