then open up for a bar rush late at night. Would other business owners think I was "cheating" or something?? I dont know why I am asking this but it just seems like a good idea--on the other hand I never see restaraunts doing that sort of thing.

It's not "cheating" in any way. Many restaurants operate in approximately this manner.

One thing you may want to consider: how many people will you need to hire to work in your shop? How many people will be interested in a job that requires them to work for a few hours mid-day, a few hours around dinner time, and then a few hours late a night? It's possible that you can find a bunch of part-time help who will each work different shifts, but I expect you'll find you're spending an awful lot of your time recruiting and interviewing for replacement workers.
