Saturated fats tend to be more solid at temperatures where unsaturated fats are more liquid.

Corn oil, a liquid at room temperature, is highly unsaturated.

Coconut oil, a solid at room temperature, is highly saturated.

"Saturation" refers to the state of hydrogenation of the long carbon chains in the molecules. Naturally unsaturated oils can be artificially hydrogenated to make them more solid. Such "hydrogenated" oils include shortening and margarine.

french fries, potato chips...sat fat for sure...but they're not ALL sat.
