Most of the time I can't even hear them except in grunge/bluesy bands. What I like about bass is they create these cool little riffs, but they don't seem very complicated or hard to play.

Well you just described my fascination with Cheap Trick. Their bass player, Tom Petersson left for a few years and they were lost without him. While they had credible guys inbetween, it just didn't click. Tom came back and the band is still going strong.

Also, for me, the sound is better distinguished in person not on a recording.

Its all in the techniques the bass player has mastered. For example some slap bass, others pick, and some finger strum. A great bass player is one who can master all of those skills, and also know how the 14 bar blues work ( a timing and rythm most common in all radio songs). Some great bass players that stand out when they play would be "flea" from red hot chilli peppers, "fieldy" from korn, and "less claypool" from primus.
