How long from birth to maturity? Can you tell male from female before they mate with thier siblings?

Molloes and swordtails mature when they are about a 1-2 months old. I'm trying to understand your 2nd question... Could you possibly edit it and add some more information.

For the second question, sometimes you can, sometimes you can't. You can tell the males as soon as the gonopodium (pointy bottom fin-like reproductive organ) begins to appear.
