For example, I could get an Associate's Degree in general studies or in Psychology but how do I know what jobs I can do with those degrees?

General studies is extremely general and as a result I don't think employers are impressed by that. Psychology on the other hand is very specialist and therefore you are restricted to psychiatrist or research psychologist.

I don't know about a list but think about what you can do with the different kinds of degree. History, English, and Maths are all very academic and as such you show your ability to work over a large time period to a good standard. Therefore typically these degrees open you to any career.

Yes, in each university is a Careers office. Visit there and ask for the books on career fields. It will shock you as to how many jobs are available in various career fields, and some none of us thought of. With a degree in English, I was able to work in TV, later as a Water Agency Manager, as an editor on a newspaper, and with further studies for a masters degree, as a counselor. None of this came to mind when I first entered college. Sadly, it was so many years ago, that I never became technically literate. Computers are still keeping me busy on a learning curve.

You may go onto CareerBuilder.com website. They can certainly help to guide you. Also from the university where you had graduated you may want to check out to see if there are any companies that are recruiting there.
