The monks would copy/illustrate books known as "illuminated manuscripts". They copied of course the bible as well as many other tomes. These were preserved in the relative sanctuary provided by the monasteries.

Generally, they didn't. They preserved the text of the Bible in Latin, by making new handwritten copies of it. They preserved the theological writings of the early "Church Fathers" similarly, and they wrote biographies of their own Church leaders, and wrote histories of the development of their own churches. They probably kept journals of herbal lore, and added a bit to them. But as far as scientific or technical knowledge went, they weren't really interested, and almost all of the ancient (before 400 AD) knowledge that fuelled the Renaissance (after 1400 AD) was preserved by the Arabs, and came into Europe via the Moors in Spain.
