The only animal with an appendix is the person, maybe a monkey.
I am thinking you mean a caecum or cecum, depending on where you look. It is basically a flap in the intestine that holds bacteria to help break down plant matter. The larger the cecum, the more plant matter it digests. Strict carnivores will have a very small or nonexistant cecum.
Note: I would verify this, but I am pretty sure that ruminents (cows, etc) do not have a cecum because they found another way- through their multichambered stomachs- double check though.

The appendix is used to digest hard woody materials like cellulose, I'm pretty sure that many animals that are strict herbivores probably have an appendix. I would imaging an animal like a beaver or a panda would defiantly need this organ seeing as they eat mostly wood and woody materials.

The purpose of the appendix in humans was to aid in the digestion of 'tough' foodstuffs. Ergo, I would assume the animal to have a diet of some difficult to digest matter.

AS far as I remember, it means that it eats green leaves etc. I think the appendix assisted in the digestion of chlorophyll related products.
