The vehicle is speed restricted to 100 mph/ 162 Kph because of the speed rating of the tires. It is programmed into the PCM and there is no access to change it outside of Ford Motor Company. And I don't mean the local dealer, this is a calibration issue that the dealer cannot change.

Remove air cleaner at the throttle body,or Carburetor.
Have someone step on the gas and watch for the throttle cable to rotate the throttle plate. Where the cable goes into the throttle cable assy on the carb look for a stop. Meaning when the throttle cable turns the plate on the side of the carb look for what is stopping the plate. Usually a bolt that can be screwed in or out. Screw it away from the plate to increase. And toward the plate to decrease. Or just remove it. Be careful though you may be able to over rev the engine with it removed. I'd just adjust it to make the top speed go up
