Well, he's an adult. I know that you're still his mother, but you have to realize that he now thinks of himself as an independent member of society who doesn't need parents meddling in his life. It's really hard to transition from complete independence to living under mom's roof. He needs to realize that he is no longer on his own, but you too need to realize that he's an adult. Although he may be dependent on you for food, shelter, etc he is an adult. You two are going to need to sit down and discuss how to set rules and how your relationship is going to function (i.e. it's not going to be the same relationship you two had before he moved out). Basically: communication is the key. You need to talk to him and work it out. Good luck!

Talk about the rules and make some compromises. If he sees taht you are willing to respect his opinions and his ideas he will be more willing to respect your ideas and rules. Make sure you pick your battles...you dont want it to seem like you disapprove of everything he does. Also if he does something you dont like but it wasnt against an established rule...give him a little leeway....tell him you didnt like what he did and you would prefer if he didnt do it any more but dont punish him....giv ehim time to learn the rules and the room to maybe make a few mistakes. good luck.
