Does anyone know when the Fiesta Bowl be re-aired?

Fox often re-airs games on their Fox Sports channels. When there is a really good game, they replay it several times. However, they are usually impossible to find because they decide what to replay too close to the time they air it, so it's not listed. Whether and when it's replayed also depends on which Fox Sports region you are in.

You can buy it off iTunes for $1.99. It's not yet available, but it should be soon.
