Travelocity.com is the best place as far as getting deals on air fare, rental cars, and hotels... and they guarantee all of the above as opposed to just the air fare.
As far as destination, go someplace that you have never been but you would both enjoy. Just enjoy the time you get to spend together and any destination can be great!

You could always look into a beach somewhere, San Diego or Florida, or quite contrarily, try skiing at either a local ski resort or Salt Lake or Colorado. Personally, on my next vacation I want to go to Seattle to see the Space Needle and I think you can do some whale watching off the coast. Before I graduated college I took a trip to Cancun, and that didn't cost us too much (because we were in college, afterall). Just make sure that if you try to go outside the country, you have a passport, because as of yesterday birth certs are no longer acceptable to get to Canada and Mexico.

It all depends where you live.
Where do you live? Is there a major airport near you? KC, STL, Omaha, Des Moines? I could tell you that from Kansas City cheap vacations are based on airfare. My wife and I can fly for $211 for both of us to Denver. I would say it depends where you live and if you are driving or flying.
I would suggest (within a 1 day drive of most Midwest locations), Nashville, Denver/Mountains, Knoxville/Gatlinburg, Minneapolis (if you like to shop the Mall of America is a great weekend destination). During the spring, summer and fall I would suggest Eureka Spings and Branson (cheaper in winter). I would suggest more if I knew where you lived.
These are all places that are cheap. Denver and the mountains are more expensive during the winter but dirt cheap during the summer.

Have you ever considered travel by train? It can be very different, and romantic. Some of them are very high class, yet still considerably cheaper than travel by air. You could research possible destinations via train and it could cut down costs a good bit if you have planned on flying far away. Road trips are always fun too though. When I was a kid my Dad drove my sister and I from Minnesota to Florida to go to Disney World, it was great to see that much of the country even if all we did was drive by it.

Go for a drive within the USA this spring. There are so many fantastic destinations to consider, based on your interests.
Bring a tent and enjoy camping to save money. Mix up a few nights of romantic camping with a few coxy hotel stays for variety.
If you want to pay a little more, consider a trip to San Francisco. It's lovely in the winter.

Mexico!!!! call a travel agent and check it out. they have pkgs at all inclusive resorts that are really nice and the flights are included too. its cheap its fun and relaxing. you cant beat it!
