Keep moving around and keep shooting, its quite easy really. I have killed in on Hardcore after only 3 attempts.

OK hes a tough cookie, i did this on insane with a friend on co op.
but if you dont have that luxury the best way is to hide by the block at the start then shoot with the bow, this will make the birds leave him the switch to a sniper rifle for 1 or 2 head shots. theres a glitch which makes him stop coming towards you but other wise pray and keep running back and fourth to each end of the map. rinse and repeat.
note when the birds surround him he is shielded. a grenade or the bow will disperse them
