"Seize the night." Or, to make it more eloquent, to take the night and live it to the fullest. Think of doing something fun at night. Like if you are a romantic (and I'm assuming you're a girl because of your icon) your boyfriend/husband/fiance/dream stud/or dream girl if need be (we must leave everything open) comes in a fashionable carriage/car. They sweep you away from a boring night and take you to a romantic restaurant. Then a brilliant walk down town to your office (yes, you now work in an office). You go up to the top floor, fireworks go off. They then embrace you. Perfect romantic night. Or maybe you're on this horrid date and your best girlfriends break in, grab and lift you up, carrying you off to the hottest new club where you party the night away. By dawn you forgot all about the horrid date and you have made many good memories.

Basically, "carpe noctem" is making the best of the night. Enjoying life, at night. Or a wonderful surprise that has to do with night. Sorry for the long winded and maybe stupid explanations, I am stalling before heading off to work.
