did you watch the clip at the end of the credits from the first movie? the monkey came and stole a piece of the aztec gold which is why the monkey can't die. it was foreshaddowing that you would see Barbossa again in the second movie. i have two thoughts as to how he came back: Tia Dalma brought him back, or that the monkey being immortal goes along with Barbossa b/c it's his monkey.

Barbossa is still cursed when Jack shot him, so he could not die.

I believe it is becuase Barbarosa can't die... I'm not sure tho...
