Spelled and Learned are correct. There is the word spelt, which I believe is a type of grain but the use of spelt and learnt are just plain bad grammar.

In practise spelled and learned are correct forms. I guess the dictionary does not recognise it.

Yes. Learned/Learnt are both accepatable.
Learned means well educated and very knowledgeable
and
Learnt is past ense of learn
