There are two contributing factors. The first being the liposomes possibly containing a greater variety of lipids, and thus more unsaturated lipids. The double bonds in these lipids interfere with the "packing together" of the molecules and results in a more fluid state of the membrane. Also the insertion of cholesterol molecules into the membrane will have the same effect. .

Is it because biological membranes usually have all sorts of transport proteins and things in them as well as lipids, whereas liposomes are just synthetically made with just lipid?
