It is Adam Gilchrist becaus he is very fast behind the wickets and takes all the catches coming there. More over his batting is absolutely awesome.
Even I like Mahendra Singh Dhoni. Both make a perfect combination

Adam Gilchrist and Kumara Sangakkara are the best Wicket Keepers from the names listed by you. Among the above 2, I consider Adam Gilchrist as the best because he has scored more centuries and half centuries, has better average and strike rate and also has effected more dismissals by catch and stumpings as compared to Sangakkara.

Adam Gilchrist - He has been around for a long time . He is a destructive opener in ODIs - can tear apart any attack . if he gets going , Australia post a high score .
In tests also , he has played many great innings . The Latest one where he scored second fastest Hundred against England .
His keeping is also good .
Mark Boucher is also good but not as effective or having as great run-making ability as Adam Gilchrist .

Adam Gilchrist - even though Boucher has 5 more dismissals, Gilly's average is way better, and he has played 9 games less. It should also be noted Gilchrist's average, which is still an impressive 48, has declined dramtically in the last 2 years, in his prime it was high 50's.
Let's look at all of their records as the easiest comparison:
M.Boucher 98 matches, 377 dismissals (363c, 14s), ave 29.84
A.Gilchrist 89 matches, 372 dismissals (336c, 36s) ave 48.54
M.Dohni 15 matches, 50 dismissals, (41c,9s) 30.69
K.Sangakkarra 64 matches, 166 dismissals (146c,20s) ave 50.64
K.Akmal 30 matches, 115 dismissals(98c,17s) ave 30.02
If you want to add ODI, Gilchrist is definately number 1 - in fact he has the best record of any ODI keeper of all time.
A.Gilchrist 247 matches, 406 dismissals(360c,46s) ave 36.20
M.Boucher 228 matches, 337 dismissals(319c,19s) ave 27.26
K.Sangakkarra 182 matches, 208 dismissals(161c,47s) ave 36.26
M.Dhoni 59 matches, 67 dismissals(56c,11s) ave 43.37
K.Akmal 57 matches, 56 dismissals(49c,7s) ave 26.90
