A Diplomat - if you also pick up another language.

To be fair - my friends that have poli-sci degrees well they don't work in anything related after Mc jobs they branched out away from degree. They are all doing well now though and quite happy - just a bit of a path deviation that is all and it is all good now.

If you don't want to become a lawyer , you can go into being a professor in College, teaching the subject - or you prefer younger kids - in high school, teaching social sciences.

You can also became a resource person in that particular field.

Definitely check out the State Department because there are lots of jobs there. you could work for your legislature.
Also check out your local city website for jobs. You also may want to consider moving to a city that is more politically powerful, d.c., chicago, new york, la, boston.

Pursue government affairs positions on Capitol Hill, in trade associations, in nonprofits, or in major corporations. These positions require relationship building centered on legislative outreach. For example, try job searches with key phrases "state relations", "government relations", "government affairs", "coalition building", "grassroots", and legislative assitant". This will give you an idea of what positions utilize majors in political science.
