actually there are two reasons that makes sharks and many other predators of the ocean (like dolphin) to attack from the bottom. one of the reason is ofcourse the fish eye structure. there eyes are located in such a way that they can view things above them quite clearly. the next improtant thing is that if the preys are taken more close to the surface by attacking from the bottom, the prey has one less direction to escape.

One of the primary reasons is that there prey will be silhouetted by the sun, making them alot easier to pick out. This is why surfers are sometimes attacked, sharks actually prefer to not eat humans, but the silhouette of a surfer looks alot like a seal. This is also why sharks and most fish are light colored on there bottom portions (so as to blend in with the surface and sunlight), and dark colored on the top (so as to blend in with the bottom when viewed from above). The other reasons everyone gave (less room to escape, eyes on top of head, prey less able to see it, ect.) also are some of the reasons.

It's all about the element of surprise (and therefore, gaining an easy meal). Prey swimming near the surface are likely not to see a shark surging toward the surface directly below them. This works so well for sharks that they have been using this hunting technique for millions of years. It is also common for them to attack from behind.

That will be one less direction for the prey to escape, since most prey can not dodge the attack by jumping out of the water.
Not only shark attack from the bottom. Many fishes pushes their prey to the near surface before they attack.

Evolutionarily, this method of hunting evolved in early sharks. as time progress, natural selection favored this predatory behavior because it is the most effective way to hunt. and this behavior became encoded to the DNA because of natural selection(gene for this predatory behavior).
Also, sharks only use their eyes seldomly to look for food or prey items. sharks follow their prey items by using detecting its prey item's bioelectric.

i guess it's because the prey usually isn't looking down.
also, it's darker towards the bottom so the shark isn't easy to spot

any predator will try to move in and attack unnoticed. think about it; if you had to attack something would you:
A) run in screaming and drawing attention to yourself
B) sneak in for an easy kill?
