Just be sensitive to her needs. It sounds to me like she has a pretty tough case of PMS (I know you said she's on her period), but it sounds like more than the normal period hormonal fluctuations.
If she likes chocolate, surprise her with a big chocolate bar and a hug, and then once the period is done, listen to her, and possibly suggest speaking to a doctor about her mood swings...out of your concern for her.

Try being super nice, ( thats sometimes hard for you guys) buy her some midol, get her a heating pad, and comfort her. A present might also make her feel good :)

Lots of good answers--- but if she is willing, you can try making love to her too. The good brain chemicals help relieve her stress and the orgasm is excellent at taking away cramps and the general icky feeling we sometimes have.
Don't forget plenty of "You're beautiful" and "I love you"

There is nothing you can do to help. You will just annoy her. It will pass. Is she on some sort of hormonal birth control? Sometimes that helps with the symptoms of PMS.
